Allergens & origins
OOBU is a gluten-free and lactose-free restaurant. All of our dishes are always gluten-free and lactose-free without a separate request — no separate menu, no surcharge, no need to ask.
A gluten-free and lactose-free house
We use no gluten-containing ingredients in our dishes. The same goes for lactose. This is not a special arrangement but the way the kitchen is built: the whole menu is the same for everyone.
Every beer we serve is gluten-free as well, and the Skagen prawn sandwich is made on a gluten-free brioche.
Lactose-free is not dairy-free
Every dairy product we use is lactose-free. That is not the same as dairy-free: nearly all of our dishes contain dairy.
We cannot prepare the whole menu without dairy. If you are allergic to milk protein, please tell us when you book — the kitchen will tell you in advance what we can serve.
The house archipelago bread
The only product in the house that contains gluten is our own archipelago bread. A gluten-free recipe for it is still in development — we have not yet found one good enough.
The bread is not a dish. It is baked on Mondays, when the restaurant is closed, and no other food is prepared at the same time.
It is brought to the table only after you have ordered it, and we always tell you that it contains gluten before it arrives. Coeliacs, and anyone who asks for gluten-free, are served gluten-free bread.
The archipelago bread contains no dairy.

“Depends on the dish” means the allergen appears in some recipes and not in others. Our service staff know the ingredients of every dish on the menu and will tell you on request.
